K-RECIPE: Slurping Noodle Dish to Chase Away the Heat

It’s the season of warmer days again, and that screams cold food! 🧊 Sure, we think of ice cream, watermelon, and iced drinks, but what about meals? So, we have for you a recipe that is perfect for warmer days. A refreshing cold noodle recipe to cool you down and chase the hunger away. Bibim guksu (비빔국수) means ‘mixed noodles’ in Korean. It is a versatile, spicy cold noodle dish that’s perfect for a quick and easy meal. It is so easy and quick, it’s my favourite go-to food whenever I don’t know what to eat or don’t have much at home. Traditionally, bibim guksu doesn’t include kimchi, but adding kimchi to this slurping noodle recipe adds some acidity, making it tangy and scrumptious - having you wanting more and more! 😋

Kimchi is a versatile staple food that can be seen as a side dish in every Korean meal or often incorporated into the main dish. But did you know that the red and spicy kimchi we see with every Korean meal actually started off as white and non-spicy? Kimchi was first made in the 7th century. It wasn’t until the 8th century that red chilli peppers were used and added to the fermentation process of kimchi 🌶 Traditionally, the seasoned napa cabbage was stored in earthenware pots and buried underground during the fermentation process. In the modern day, you’ll find many Korean families now have separate fridges just to store kimchi. This isn’t just because of the large quantities of kimchi, but to isolate the kimchi’s pungent and strong smell from other foods. Kimchi is so important to Korean families and needed in every meal that it has even been brought to space before 👩‍🚀Millions of dollars were spent to develop kimchi suitable for space consumption. This staple Korean food has even become one of the most viral Korean memes 📱And it slaps - literally. Taken from the k-drama Everybody, Kimchi! the dramatic kimchi slap has become legendary on the internet ever since its airing 👋 Now that you’ve learnt some facts you never knew about kimchi, let’s get right into the recipe! ⬇️

CHRISSE EN PLACE 

Ingredients

  • 200g thin noodles (somyeon, 소면)
  • 1 cup of kimchi (thinly sliced)
  • Sesame oil
  • Cucumber (optional) 
  • Lettuce (optional)
  • Sesame seeds (optional)
  • Egg (optional)

Sauce:

  • 1/4 cup juice from kimchi
  • 1 Tbs gochujang (Korean red chilli paste)
  • 1 Tbs soy sauce
  • 2 Tbs vinegar (any clear vinegar)
  • 2 Tbs sugar
  • 1 Tbs minced garlic
    1. Mix the kimchi juice, gochujang, soy sauce, vinegar, sugar and minced garlic, and stir until the sugar is dissolved to make the sauce.
    2. Cook the thin noodles in boiling water.
    3. After putting in the noodles, pour in half a cup of cold water when the water is about to boil over. (Repeat this process 3 times)
    4. Once the noodles are thoroughly cooked, drain the noodles and rinse them under cold water to stop the cooking. Rinse the noodles until it becomes cold and drain well.
    5. Combine the noodles with the mixed sauce and toss the noodles until evenly coated with the sauce.
    6. Put the noodles into a bowl and top with desired vegetables and boiled egg for garnish. Drizzle some sesame oil and top with some sesame seeds for garnish.

    Simple and straightforward, right? This noodle recipe uses minimal ingredients, making it a magnificent quick and easy meal. Adding vegetables and garnish of your choice, you can have it any way you like! You can even top it off with some samgyeopsal (삼겹살), grilled pork belly for some juicy, meaty goodness too!
